Creamy, Vegan Potato Leek Soup

Creamy, Vegan Potato Leek Soup

3 tablespoon Earth’s Balance(vegan butter)
1 small onion
2 carrots
2 celery stalks
2 leeks
4 large potatoes
5 cups vegetable broth (add more water if necessary)
1 1/2 cups unsweetened almond milk
1 teaspoon italian seasoning
1 teaspoon garlic powder
lots of salt and pepper
1/2 teaspoon dried sage
1 tablespoon fresh chives

Melt one tablespoon of Earth’s Balance in a large pot. Add the onions, carrots, celery, and leeks (all should be diced). Once all the veggies have softened, add the potatoes, all of the spices, and another tablespoon of butter. After 5 minutes, add the broth. Turn off the heat once the potatoes are soft and add the almond milk and the last tablespoon of Earths Balance. Whir until creamy. Once the soup is smooth add the chives and plenty of salt and pepper.
