I have been dancing Tap for just under a year now and I am picking the movements up without much trouble. However I am really struggling with pick ups. I just can't seem to the get up to get the beats in. Would really appreciate any help and tips

Can you please clarify what you mean by pickups? There are some tap steps that are called different names by different teachers/choreographers and pick up is one of them.
A pickup is a tap movement where the dancer travels up and does a nerve tap as they come back down.
A pullback, which is often incorrectly referred to as a pickup, is a tap movement where a dancer travels up and BACK as they spank their feet back simultaneously (or one then the other if doing an alternating pullback).
Pullbacks are a lot more common so I think that may be the move you're actually trying to learn. My descriptions may not be the best; can you tell which one it is that you're attempting to learn?
