I've made a lot of things in my lifetime and even though I can't eat sweets, I love to bake. However, when this recipe was sent into my Christian Homemakers group, I said that there was no way this was going to work. If you know me, you know I had to try it. The possibilities w/this recipe are endless! I made this and even though my sister said it was a little dense, everyone said it really tasted good. I made Cherry Garcia w/some leftover chocolate chips and almonds. My sister went to the store and picked out the flavor of ice cream. I want to try Chocolate & chop up Peanut Butter Cups & maybe add bananas. Or maybe Chunky Monkey & add Peanut Butter Cups or more bananas. Like I said, the possibilities are endless! Have fun making this and tell us what flavors you used.
Pistachio Almond Ice Cream Bread
1 PT. (2 cups) semi-melted ice cream (any flavor of choice)
1 1/2 cups self-rising flour
Assorted mix ins of choice
Preheat oven to 350. Spray an 8x4 or 9x5 loaf pan with baking spray. Stir together flour, ice cream & mix ins in a med. bowl until just combined. Pour batter into prepared loaf pan. Bake until a toothpick inserted in the center come out clean (there may be a few crumbs) about 40-45 min. Allow to cool in a pan about 10 min. Panic, did you not read what I wrote? I said I made it w/Cherry Garcia Ice Cream and some leftover chocolate chips and almonds. My sister said it was a little dense and because we didn't have self-rising flour, I used a substitute. My sister said it was good. I was just curious to see if it would actually bake up. Hey, it's a science experiment you can eat! LOL |

You know what, that's the best thing about cooking. You just never know how something is going to turn out. Even tried and true recipes can fail. And odd recipes can surprise you. Finding what works and what doesn't. Even the failed experiments teach you something. We have some great stories in my house about failed recipes that always meake us laugh! We were laughing over one story just last night at dinner, but unfortunately, it's far too crude to repeat on DDN.

You know, this doesn't sound that awful or odd to me. If you think about it for a second, you've got all the between the two components, you have all the wet and dry ingredients needed for a cake.
In the self-rising flour you have the flour (duh) and leavening. In the ice cream you have sugar, milk, and eggs (assuming the ice cream is custard based - admittedly, some ice creams are not), and probably a little bit of salt. |

I can see it turning out well, but it seems like a waste of ice-cream to me. I can't imagine it's very cost effective. I'd rather just eat a regular cake, and regular ice cream. |

Self rising flour is all purpose flour with baking powder and SALT.
I mistakenly bought a bag before Christmas and used it, adjusting for the baking powder. Every recipe was much saltier than my usual products because I rarely add salt even if the recipe calls for it.
I believe if you want to use the above recipe you can use a cup of all purpose flour and 1-1/2 teaspoons of baking powder instead of the self rising flour. (I would omit the 1/2 tsp of salt)
I don't think I'd waste a pint of Ben Jerry's on this, but occasionally we have a "make your own ice cream sundae" event and there is usually some half melted ice cream left over. I can imagine that this would be a good way to use up the ice cream as well as the toppings.

KandyKane, I don't know what cake balls are so I guess that doesn't help you, does it? It didn't rise as much as other breads I have made but like I say it was interesting.
With my mom's Vertigo she hasn't been driving much. My sister took my mother to the store because we were running out of something or needed something for a recipe like this one. I had no idea what kind of ice cream or flavor she would get. Like I say, you can use any flavor and any brand. I'm sure if there was a cheaper brand, I'd buy that and I'm sure there is. Sometimes it's even on sale but not to often. I was even thinking of buying ice cream that my family likes and using some of that. It does say 2 cups.
It just seemed like something different. I never thought about it being a liquid and having some of the same ingredients as in a cake or bread. I just thought, it's ice cream and I am making it into a bread! |

I made Cake Crumb Pudding for Christmas dinner because it was a favorite with my kids when they were growing up. Some of the girlfriends and DILs had never had it before and when one of them asked for the recipe, she said, "So basically, you start with cake, then add more cake."
I too had never looked at it that way, but she was right!
