I love soup, especially in the winter time. I am always up for a new soup recipe. When I saw this recipe, I had to try it. It is just so good! It is also very filling and I am still full 3 hours later. I also had a half a grilled cheese & turkey and roast beef sandwich on Italian Bread. If you love soup and Mac & Cheese, you will love this recipe. Also, feel free to send in your own fave soup recipe. I'd love to see it.

Macaroni And Cheese Soup

1 cup elbow macaroni, uncooked (We didn't have elbows so I used multi-colored veggie small sea shells.)
1/4 cup butter
1/2 cup carrots, finely chopped (I had some that I already cooked and froze so I used them.)
1/2 cup celery, finely chopped
1 small onion, finely chopped
3 cups of milk (We use 1% in my house and I used that.)
6 oz. process American Cheese - shredded (I bought a chunk of Boar's Head because I was told it also has cheddar in it)
2 TBSP. chicken flavored bouillon granules (I used Watkins but if you wanted, you could use some chicken broth too. It's just for flavor.)
1/2 tsp. ground white pepper (we only had black)
2 TBSP. cornstarch
2 TBSP. water
8 oz. can whole kernel corn, drained (I bought frozen gold and white corn & measured out 8 oz.)
1/2 cup frozen English Peas (they didn't have this so I bought reg. baby peas.)

Cook macaroni per package directions, omitting salt; Drain and set aside.
Melt butter in a large skillet over med. high heat; add carrots, celery, and onion, and cook, stirring constantly, 5-7 min or until tender. Remove vegetable mixture from heat; set aside.
Combine milk and cheese in a heavy dutch oven, and cook over med. heat, stirring often, until cheese melts. Stir in the bouillon granules and pepper.
Combine cornstarch and water, stirring well; stir into the milk mixture. Cook over med. heat, stirring constantly, until mixture thickens and comes to a boil. Boil 1 min., stirring constantly.
Stir in macaroni, vegetable mixture, corn, peas; cook over low heat, stirring constantly until thoroughly heated.

When I was putting this away, it had gotten a little thick so I added a bit more milk. You will so love this recipe!

I made a great soup yesterday, it didn't really have a recipe, but I just combined some leftover frozen vegetables we had in the freezer, 2 potatoes, an onion, 2 cans of diced tomatoes and some crushed garlic, oh, and some salt. It tastes amazing, which I was really surprised by.

Yours sounds amazing though, I think I'm going to try and make some :D

So there was no broth, just the tomatoes? I think I like yours but I like pasta in my soup. That is what I would add. In fact, I saw today in the store broken spaghetti! That's what my mom sometimes puts in her soup and now she doesn't have to do it anymore. When she does it, I always find broken spaghetti on the floor the next day. This way that won't happen. I also found tiny bow ties that are carrot and tomato and some tiny elbow looking pasta that were I think tomato and squash. I bought them to make soup and other things. They sounded interesting!
