I have been looking for ballet dictionaries for a long time!

In ABT's website, there is an amazing dictionary, including the dancers doing and showing how to do, simply the best!

if you want ballet vocabulary as a book, a good one would be the "Dictionary of classical ballet terminology: RAD method". it's very detailed. here's a picture of it ( it's the one on the right )
